Preheat your smoker to 325 degrees F. Hickory wood works well with this dish.
Remove chicken from packaging and place on wooden board.
Generously apply the rub to all sides on the chicken.
Empty ½ a can of beer into a jug to be used later. Insert the can of beer into the chicken’s cavity to make it stand breast side up. Place the bird in your smoker and smoke for 1 hour.
Brush the chicken with the BBQ sauce. Return to the smoker and cook until the internal temperature in the deepest section of the chicken reaches 165°F. This will take approx. 30 minutes.
Remove the chicken from the smoker and place on a wooden board.
Let the meat rest for 10 minutes, then serve.
