Ingredients
8-10lb bone-in butt pork shoulder
3 tbsp packed light-brown sugar
Coarse salt and freshly ground black pepper
2 ½ tbsp
Blues Hog BBQ ‘Original’ Dry RubWarmed BBQ sauce to serve
Instructions:
Place the pork shoulder on a large butcher paper lined baking sheet. In a small bowl, combine brown sugar, 2 tbsp salt, 1 tsp black pepper and 2 ½ tbsp of Blues Hog BBQ Original BBQ Dry Rub. Coat the pork in this mixture ensuring to cover all sides.
Cover the meat and refrigerate for at least 2 hours, preferably overnight if possible.
Preheat your grill to 325 degrees F.
Remove the pork shoulder from refrigerator and bring to room temperature. This will take approx. 30 minutes.
Pat the meat dry with paper towels. Add pork shoulder to grill and sear the meat with an open flame until golden brown all over. This should take about 4 minutes for each side.
Place the pork shoulder on the grill fat-side up. Cover with lid.
Transfer to grill and cook until meat shreds easily with 2 forks. This should take approx. 5 to 6 hours. Baste pork with pan juices every hour.
Once cooked, remove from the grill and shred meat with two forks.
Serve meat with warmed BBQ sauce and buns.
