This is a unique and flavourful way to prepare tri tip from Buff BBQ. Not the traditional method of cooking tri tip, the results are exceptionally delicious.

Preheat your smoker to 225 degrees F.
Remove the tri tip from the refrigerator. Coat the tri tip in yellow mustard and season on all sides with the Big Poppa Smokers ‘Cash Cow’ Rub.
Place the tri tip directly on the grill grates and smoke until the internal temperature reaches 165 degrees F. This will take approx. 4-5 hours.
Remove the tri tip from the smoker and wrap in butcher paper. Return the wrapped meat to the smoker and cook until the internal temperature reaches 200 degrees F. This should take approx. 3-4 hours.
Once cooking is complete, remove the tri tip from the smoker and leave to rest wrapped in the paper for 30-45 minutes.
Slice into individual portions and serve.
